GRILLED HALLOUMI SALAD WITH GINGER LIME DRESSING

INGREDIENTS


Dressing
⅓ cup lime juice
½ tablespoon ginger, minced
½ teaspoon chili flakes
1 tablespoon CO-OP GOLD PURE Honey
⅓ cup rice wine vinegar
¼ cup vegetable oil
1 cup fennel - Shaved
200 grams halloumi, cut into ½-inch slices
2 cups fresh peaches, pitted and sliced in sixes
2 tablespoon fresh cilantro, ripped
¼ teaspoon salt
1/8 teaspoon black pepper, ground


DIRECTIONS

Prep Time: 15 mins
Cook Time: 5 mins

Blend lime juice, ginger, chili flakes, honey, vinegar and oil on high for one minute. Reserve dressing for later.
Pre-heat grill on high. Grill each side of the halloumi to add dark grill marks, about one minute on each side. Place on a cutting board and cut into strips and place in a medium-sized mixing bowl. Add all other salad ingredients, dress and serve.
